Here is a GREAT recipe folks...

Okay, now this is obviously a Free day recipe, or I am sure you can modify it, but this is the best Lasagna EVA...and I say that because it is quick, easy, and tastes phenomenal!!

2 packages italian seasoned ground turkey (Jenny-O brand)
1 package lasagna noodles
2 jars of Classico brand Italian Sausage pasta sauce
15oz of Ricotta cheese
1 pound of Mozarella
1 cup parmesan cheese

In a dutch oven, brown the ground turkey fully. After it is browned, mix in the Italian Sausage pasta sauce. Let simmer for 1 hour. After sauce has been simmering for 40 minutes, You want to start your noodles... In a 13x9 pan, in very hot tap water, soak your lasagna noodles for 20 minutes, then drain. Now you are ready to layer your lasagna. Put 1 small layer of sauce on the bottom of the pan (prevents noodles from sticking.) then layer noodles, ricotta cheese, mozarella cheese, meat sauce and sprinkle with 1/3 of your parmesan cheese...then begin with noodles again, and repeat. The last layer is noodles, mozarella and parmesan. Cover pan with foil (spray the foil with non-stick cooking spray to prevent cheese sticking.) and put in the oven at 375 degrees for 30 minutes...then take off the foil and cook for another 25 minutes. Let sit for 20 minutes before serving...Delish!!!!

For a healthier version, you can use Whole Wheat pasta, and low fat cheeses....let me know what you think!

OMGGGG

Okay...nothing new on the job front yet, I feel like I nailed the interview, but at the end of the day, I am good with whatever decision comes down the pike. Eating and excercising is soooo right on, I haven't felt this good in a couple of years!!

Now to the real reason for this post...just got done watching Made of Honor...OMGGGGGG...okay, can I just say that I LOVE Patrick Dempsey...never was a huge fan, I don't watch the McDreamy thing...but this movie was GREAT!!!! Loved, Loved, Loved it!! Sigh...okay, off to dream beautiful dreams...

Well, I've got a job interview today...funny, I'm not nervous at all...I figure if it is the right job for me, I'll get it, and if not, just means there is something better down the road...but I'll always take some prayers if you want to send them this way.

Failure is NOT an option.

Dang, I feel GREAT!! I just finished my Upper Body workout, and I feel strong, empowered, and invincible!! I got through my benchdips as the last part of my Tri's without having to stop in the middle...YEA! That felt awesome...remember that part in the body of life video, where someone said when they didn't think they could get that last rep out, they imagined Bill right there...that was me today...man, I'm beat from the great work-out, but at the same time I wanna run up a bunch of stairs and pump my fists in the air like Rocky!! oh yea...I was beeboppin around here shadow boxing to my ipod...had a little bit of LL Cool J singing Mama said Knock you out...this is my anthem tonight...negative talk...Mama said knock you out...Fear...mamas gonna knock you out...I AM THE CHANGE!! You ever have one of those days?? Where just everything seems to be sunshine and roses...funny how since I have been transforming...more and more of these kinda days keep poppin up! Must be the power of purpose!!

Well, I did it. Entered a BFL challenge...perfect timing too...I started on the 1st, and the 3rd was the last day to enter for 2008. I am ready, I am kicking butt already, and I am going to BE THE CHANGE!

A Spritual Epiphany...

Okay, I was sitting in church today, and I had an epiphony...let me give you a little background...3 months ago I lost my job...a job I really, really loved, and was good at, and I lost it for some really insane political drama...so needless to say, I have had a really hard time, and I haven't had even a nibble in my job search attempts...so I am sitting in church, listening to the priest preach his sermon, and it's like God just whacked me upside the head...here I am putting question marks where He has put a period...here I am, struggling, asking why, when I just got my answer. I defined myself by that job. I let the job become my self-worth...not the fact that I am a wife and mother (and good one too) not the fact that I am a child of God, not that I am so full of worth, that my father gave his only son for me...My house is not in order. Not my physical house...(but oh man does that need attention) but my spiritual house...I felt God speak to me tonight, tell me that before I "run" back into worldly endeavors, I need to clean house. I heard him tell me to leave my worries at the feet of his son, I clearly understood, that until this "transformation" takes place, he is helping to keep my mind free of all outside thoughts and missions except the ones that he has already given me to take care of...does this make sense to anyone...I know I am just spewing all of this out...I will still keep looking for a job, but it will be AFTER my time with him each day, AFTER I make sure my house is in order, not before or instead of. I can't tell you how emotional this post even is for me, i can barely type because of the tears streaming down my face, my God is such a wonderful God, and I know that if He takes care of the birds of the sky, how much more will he take care of me, his beautiful daughter.
